Dark Chocolate Covered Strawberries - A Pinch of Healthy


With Valentine’s Day just around the corner, I wanted to share a tasty treat that is so indulgently delicious: dark chocolate covered strawberries.😍🙌🏻

These are perfect for Valentines Day, or any day. I added some Valentines-themed sprinkles to jazz these up a little bit.

And YES, I am aware that most sprinkles have dyes and things in them that are not optimal. Feel free to leave them off if you prefer. But they really are so cute and festive.😍

With so few steps and even fewer ingredients, I can barely call this a recipe. And yet, time and time again these are your favorite type recipes.

If you are looking for a dessert to treat yourself with something that actually has a few redeeming qualities (fruit! antioxidants!), then these may be worth making.😎👊🏻

I was making these dark chocolate covered strawberries anyway for my sweet husband and kiddos as a little Valentines treat. So I figured…why not snap a few photos and share the idea with my virtual friends!

But thinking back to my footloose and fancy-free single gal days (which was basically my entire life outside of the past 15  years)…I may have made these for myself and/ or my girlfriends in years past.

In fact, I remember a certain girls beach trip where we made these and stayed up until the wee hours laughing our faces off. Are any of you girls reading this??? 🥰

So whether you are blissfully in love…or whether you are throwing a Love Stinks party with your gal-entines…I hope you enjoy this little treat idea!

What type of chocolate to make chocolate dipped strawberries

I am using extra dark chocolate chips, with 63% cacao. You can use milk chocolate, dark chocolate, or even white chocolate. The baker’s chocolate chips in the microwaveable cups are very handy. I used to use these exclusively.

But! I have recently become a fan of just using chocolate chips with the double boiler method for melting. I do not have a double boiler pot. I simple bring a regular pot of water to a boil and use a tempered glass pyrex dish over the top to melt the chocolate gently.

It takes a little patience. It melts the chocolate beautifully, and you won’t run the risk of scorching it, like in the microwave.

Garnish options

The cute sprinkles, as shown here, are probably the easiest, aside from leaving them plain.

We make plain ones all the time. So don’t feel like you have to garnish! If you prefer garnishing, though, here are some great options:

  • Drizzle a second type of melted chocolate over the top. You can do this by dipping a spoon in melted chocolate and moving it back-and-fork over the strawberries to make little drizzle lines. White chocolate probably looks the prettiest because of the contrast. I would suggest doing this after the original chocolate sets a little.
  • Melted peanut butter chips or butterscotch chips, drizzled over the top as described above
  • Crushed nuts of your choice: cashews, almonds, macadamias or peanuts are all delicious – sprinkle these while the chocolate is still soft.
  • Coconut flakes – sprinkle while chocolate is still soft
  • Crushed cookie crumbs – shortbread or Oreos would work great. You can use a food processor to make the crumbs really fine if you want. Or you can just use a wooden spoon to crush the cookies inside a sealed freezer bag.

What to do with leftover melted chocolate

Inevitably, you will have a little chocolate leftover. Either the chocolate pool will get too shallow to dip, or you will run our of strawberries. What to do?

Take a sheet of parchment or wax paper, and pour the melted chocolate in it. Add crushed nuts of choice. I used whole pepitas and crushed cashews. And I sprinkled the whole thing with pink Himalayan salt.

Oh. My. Goodness! You will not be sorry. In fact, this inspired me to do a whole separate chocolate bark recipe, with many variations.😉👍🏻

Dark Chocolate Covered Strawberries

Dark chocolate covered strawberries are a tasty treat that are perfect for Valentines Day, or any day.

Time for chocolate to set 30 minutes

Ingredients

  • 16 ounces fresh strawberries
  • 6 ounces dark chocolate* (I am using extra dark chocolate chips - see notes)

Instructions

  1. Wash and fully dry the strawberries. Make sure they are dried really well so the chocolate will stick to them. (I even let mine sit outside the fridge for a while to take the chill off and prevent condensation.)

  2. Pour chocolate chips into a tempered glass bowl, such as a pyrex, and set aside. (Note: I meted the whole 11.5 ounce bag)

  3. Bring 1 to 2 cups of water to boil on a stovetop in a pot.

  4. Turn off the heat to the stove, and place the glass bowl of chocolate chips on top of the hot pot of water, and allow the chocolate to melt gently, stirring occasionally. Be patient, this will take 7 to 10 minutes to melt all the chips.

  5. Dip each strawberry, and place on a hard surface (I used a sheet pan lined with parchment) until the chocolate hardens (about 30 minutes).

Recipe Notes

Nutrition information was calculated using a nutrition label generator.

I used an 11.5 ounce bag of extra dark chocolate chips (63% cacao). I melted the entire bag, and I used about half the chocolate.

Baker's dipping dark chocolate is what I used for years. They sell 7 ounces in a microwaveable cup. If you use this (or any other similar brand) just melt the chocolate according to package instructions, being careful not to overheat and burn the chocolate.
