Vettu cake is a sweet fried tea time snack which can be
found in the glass cabinets of most tea shops in Kerala. It is very easy to
make and just taste like a cake.
Ingredients:
All purpose flour-1cup- Semolina (rava) – 2 1/2 tbsp.
- Sugar –2tbsp.
- Egg-1
- Cardamom powder-1/4tsp
- Baking powder-1/4tsp
- Oil-for deep fry
- Beat egg and sugar in a blender.
Mix all purpose flour, semolina, baking powder and cardamom powder in a bowl.
Add egg mixture in to the flour and make dough.
Cover it with a wet towel and rest for 30 minutes.
After 30minutes; take the dough and divide them in to small balls (half the size of lemon).- Take a ball and flatten it little in your palm.
- Now make "x" mark on top with the help of a knife (Or roll the dough in to half inch thickness; Cut it in to square pieces and make an ‘x’ shape cut on each square ).

The size of the vettu cake will double or triple when we fry it; so make sure to cut in the correct thickness and length.- Drop them in to hot oil; after that make the flame to very low (else the inner side didn't cook for sure).
Deep fry in low flame until golden in color
Note:
- The oil should not be so hot; so that the outside get burned and the inner side not cooked well
