Ingredients:
- Banana-1
- Flattened rice (avil / poha)- 1/4 cup
- Freshly grated coconut-1/4 cup
- Sugar-2 tbsp (Or jaggery powder)
- Cardamom powder-a pinch
- Flour-1/2 cup
- Salt-to taste
- Eggs-2
Preparation:
- Add banana in to a bowl and mash well.
- Mix it with flattened rice, coconut and cardamom powder well.
- Keep aside.
- Mix flour with enough salt and water; make a dosa batter consistency.
- Make three crepes out of it (3 thin dosa on a pan)
- In a wide bowl mix two eggs with little salt.
- Now keep the filling, crepes and egg mix near by.
- Take a small pan (the pan we made crepes)
- Dip one crepe in egg mix and place it on the pan.
- Above that spread half of the filling evenly.
- Then cover it with another crepe dipped in egg.
- On the top add the remaining filling and spread evenly.
- Cover it with the remaining crepe by dipping in egg.
- Pour the remaining egg beaten on top.
- Cook covered on low flame for 10 minutes or until slight golden in color.
- Carefully flip to another pan (or in to the same pan) and cook for another 6 to 8 minutes.
- Serve by slicing it after cools down.
