Spinach Coconut Stir Fry

Spinach stir fry is one of the healthiest and easiest stir fry that you ever made.Spinach is so tender and cooked so quickly. Cooking more time may tends to be bitter in taste. So just saute for two to three minutes. Addition of grated coconut makes it delicious and bit crunchy. Try this easy stir fry recipe and leave your feed backs here.
Ingredients:
  1. Oil-1 tbsp

  2. Mustard seeds-1 tsp

  3. Spinach chopped thinly- 5 cups

  4. Grated coconut- 1/2 cup

  5. Green chilly-2

  6. Shallots / small onion-4

  7. Curry leaves-one spring

  8. Salt-to taste


Preparation:



  • Wash and cut the spinach in to as thin as possible. 

  • In a blender add grated coconut, shallots and green chilly.

  • Blend coarse and keep it aside.

  • Heat a pan with oil; splutter mustard seeds.

  • Add curry leaves and blended coconut mix; mix well.

  • Add chopped spinach and mix well.

  • Cook for about  one to two minutes until the spinach get's reduced to it's 1/3 rd volume. 

  • Then add little salt to taste and mix well.

  • Serve in side with steamed rice.
