Custard Powder Cake

Egg-less custard powder cake is a super moist and delicious sponge cake. It can make without much more efforts and the lovely chocolate ganache on top make it finger licking good. Try them in oven or stove top as per your convenience.

Egg-less Custard Powder Cake
Ingredients:
  1. Flour- 1 1/2 cup

  2. Baking powder-2 tsp

  3. Baking soda- 1/2 tsp

  4. Salt-a pinch

  5. Oil-1/2 cup

  6. Powdered sugar-1 cup

  7. Custard powder- 1/2 cup

  8. Warm milk-1 cup


Preparation:



  • Measure all the ingredients and keep it near by.

  • Grease a 8 inch cake pan with oil and dust flour.

  • Heat a pan having tight lid (having narrow air-hole) or pressure cooker (by removing it's whistle and gasket) with salt (about 2 cups) and place a stand on top.

  • Cover the lid and heat on low flame until the batter gets ready.

  • In a large bowl add oil and powdered sugar; beat until mixed well and creamy. (by using an electric beater or hand mixer).

  • Add vanilla essence.

  • Sift flour, baking powder, baking soda and salt in to it.

  • Keep the bowl aside.

  • In another bowl add custard powder; add warm milk little by little and mix well without any lumps.

  • Pour this custard mix in to flour mix by  two or three additions. Fold well without any lumps.

  • Pour the batter in to greased baking pan and tap gently to remove air-bubbles.

  • Place it inside the pre-heated pan and cook on low flame for about 1 hour and 40 minutes. (the cooking time may vary about 10  minutes more or less depending on the heat variations).

  • Allow to cool completely before applying chocolate ganache on top.


Ingredients For Preparing Chocolate Ganache:



  1. Chocolate-50 gms (use milk chocolate or dark chocolate)

  2. Butter-2 tbsp

  3. Fresh cream-4 tbsp


Preparation:



  • Heat a pan with water. Place another dry bowl on top (double boiling method).

  • Add chocolate, butter and fresh cream in it.

  • Mix gently until melts completely to form a thick frosting ganache.

  • Spread it on top of the prepared cake.

  • Garnish on top with sliced cherries and pistachios.
