Most of the Indian meal consist of teaspoon of hot pickle in side. Here is an easy and finger licking pickle recipe with the lovely nutrient rich root vegetable. Check out my recipe of making homemade pickle powder for instant pickling.
Ingredients:
- Carrot chopped thinly-2 cup
- Sesame oil- 1/4 cup
- Mustard seeds-1 tsp
- Curry leaves-3 springs
- Thinly chopped ginger-2 tbsp
- Thinly chopped garlic-2 tbsp
- Thinly chopped green chilli-2 tbsp
- Pickle powder-2 tbsp
- Vinegar- 1/4 cup
Preparation:
- Heat sesame oil in a pan; splutter mustard seeds.
- Add ginger, garlic and green chilly; Saute for 2 to 3 minutes.
- Add curry leaves and chopped carrots.
- Saute for another 3 minutes.
- Add pickle powder and salt; mix well.
- Add 1/4 cup of vinegar and allow to boil for a minute.
- Turn off heat and after cools down completely; store them in an air tight container for long use
