Amrutham Podi Kinnathappam
Kinnathappam is a Kerala Special time snack made with raw rice, coconut milk and eggs. It is a form of steam cake or pudding texture. Here is another variety of kinnathappam using Amrutham podi instead of rice powder. Amrutham podi (Nutri mix powder) is a health supplement provided in Kerala for kids and pregnant ladies to fulfill their nutritional status. The ingredients in Amrutham podi are wheat, ground nut, soya bean, gram dal and sugar/ jaggery. 

Ingredients:

  1. Amrutham podi- 1/2 cup
  2. Milk or Coconut milk-1/2 cup
  3. Jaggery melted- 1/4 cup 
  4. Egg-One large
  5. Cardamom powder-a pinch
  6. Salt-a pinch
  7. Coconut pieces-few to garnish (Or fried nuts)
  8. Ghee-1/2 tsp

Preparation:

Grease a wide plate with 1/2 tsp ghee (about 7 inch diameter)

In to a blender add all the ingredients from 1 to 6; blend smooth for 2 to 3 minutes.

Quickly pour into the greased plate.

Steam cook it for 20 minutes. (After 5 minutes of cooking , open the pan and garnish on top with coconut pieces or fried nuts)

Allow to cools down completely and them cut them in to pieces.
