One of the simplest fish curry recipe using prawns, raw mangoes and coconut milk.
Ingredients For The Curry:
- Small onion (shallots) chopped thinly- 1/4 cup
- Thinly chopped ginger-1 tsp
- Green chilly split-3 or 4
- Prawns cleaned-250 gm
- Coconut milk- half of a coconut (about 1 1/2 cups)
- Water-about 1/4 cup
- Salt-to taste
- Turmeric powder-1/2 tsp
- Chilly powder-1 tsp
- Coriander powder-1/2 tsp
- Chopped raw mango-1 medium
- Coconut oil-1 1/2 tbsp
- Fenugreek seeds-1/4 tsp
- Shallot chopped-1 tsp
- Curry leaves-few
- In a clay pot or curry pan add ingredients from 1 to 10. Mix it and boil for about 10 minutes.
- Then add raw mango (peeled) chopped and cook for another 5 minutes.
- Do seasoning by heating coconut oil in a pan; add fenugreek seeds, followed by shallots and curry leaves.
- Pour the seasoning in to the curry and cover the curry for 15 minutes.
- Serve warm with steamed rice and enjoy..
