Greek salad is so great with a side of grilled chicken, hummus and pita bread…or a side of pizza. 😉👊🏻 Just sayin’! This isn’t meant to be a meal in itself. Pair it with whatever tickles your fancy.

I used tomatoes, cucumbers, red (um, purple?) onion, kalamata olives, and a bell pepper ring right on top. Definitely a winning combination.

I will say that a little feta goes a long way in the flavor sense. But I admit some days I want more feta. My recipe amounts are merely suggestions, people! Just add how much sounds good to you that day. 😆👍🏻

The top it off with my tangy Greek red wine vinaigrette . It tastes a whole lot like the stuff from Zoe’s Kitchen.

In fact, this entire salad was inspired by the Greek salad at Zoe’s. I craved it when I was pregnant with both of my kids. Well, okay…fine! I crave it regardless. 😆 But the level of craving was turned up a few notches when I was pregnant. It certainly doesn’t hurt to know how to make one of these for myself! 😉

If you really want to take it to the next level, add some caramelized onion. In all honesty, I do not generally take the time to do this step. But it is what gives this salad that Zoe’s feel.

And I didn’t add caramelized onion for the pictures, but I thought I’d just throw that out there in case any of you want to try it! You won’t be sorry. And if you want to be semi-lazy like me and leave it off, that’s fine too. 😎

Greek Salad (Zoe's Kitchen copycat)

This Greek salad is a simple, fresh, tangy and delicious way to eat your veggies. And it tastes just like the Greek salad from Zoe's Kitchen!

Ingredients

  • 2 to 3 cups mixed baby greens
  • 3 to 5 cucumber slices
  • 1/2 cup tomatoes, sliced
  • 1 Tablespoon red onion
  • 8 kalamata olives (or more)
  • 1 Tablespoon feta cheese crumbles
  • Greek red wine vinaigrette to taste

Instructions

  1. Make a bed of greens in a bowl or on a plate.

  2. Add all the veggies (as much as you like!) on top: tomatoes, cucumbers, red onion, kalamata olives

  3. Sprinkle with feta cheese crumbles, and top with Greek red wine vinaigrette, to taste.

  4. Add caramelized onions if you are feeling fancy. (totally optional)
