
Boiled egg curry is one of the affordable choice for most of them. Here is an easy and delicious Spicy egg masala which goes well paired with paratha, roti , naan or basmati rice. The curry demands only simple ingredients and less cooking time.

Ingredients:
- Boiled Eggs-3
- Oil-2 tbsp
- Whole spices-1 tsp (includes cumin seeds, cardamom, clove, fennel seeds and pepper corns)
- Thinly chopped onion-2 large
- Thinly chopped ginger-1 tbsp
- Green chilli split-2
- Turmeric powder- 1/2 tsp
- Cumin powder- 1/2 tsp
- Kashmiri chilli powder-1 tbsp
- Coriander powder-1 tsp
- Salt-to taste
- Tomato-2 large
- Coriander leaves-to garnish
- Fry the boiled eggs in hot oil until nice golden in color; keep it aside.
- Heat a pan with oil and add whole spices and allow to splutter.
- Add thinly chopped onion and saute until golden brown in color.
- Add ginger and green chilli; saute for a minute.
- Add all the spice powders one by one and mix well.
- Puree two large tomatoes in blender along with little water.
- Add it in to the pan and mix well
- Cover cooks the pan for about 6 minutes or until the tomato puree gets dried well.
- After that add 2 cups of water and mix well.
- Cooks for another few minutes until the curry starts thickens.
- Sprinkle coriander leaves on top and switch off the flame.
- Serve hot with paratha, roti or naan
