Raffaello cake is a snow white cake resembles the Raffaello candy. Just like the candy it also tastes finger licking good. The flavors of coconut, almond and white chocolate makes the cake so yummyyy...

Ingredients:
- Eggs-3 large (room temp)
- Powdered Sugar-1 cup
- Flour-3/4 cup
- Powdered almond-1/2 cup
- Coconut oil-1 tbsp
- Vanilla essence-1 tsp
- Grease the cake pan with butter and dust with flour.
- Keep all the measured ingredients near by.
- For pre-heating; Heat a pan with tight lid on low flame until the batter gets ready (Or for 10 minutes.). Place a stand inside.
- Separate three whites and egg yolks.
- Beat the egg whites on high speed; add powdered sugar in three intervals and beat until thick and fluffy.
- Mix egg yolks with vanilla essence and coconut oil; mix well and slowly add it in to the egg white bowl.
- Also add powdered almond and flour.
- Beat on lowest speed for few seconds only.
- Then gently fold the batter to combine well.
- Pour the batter in to greased pan and place it inside the pre-heated pan.
- Cook on low flame for another one hour.
- Cool the cake completely before frosting.
- The cake batter must be fluffy after mixing all the ingredients; (For that; dont over beat after adding flours; fold it gently)If the batter falls; the cake also falls. If your batter falls; try to add a teaspoon of baking powder also.
- The cooking time may vary 10 minutes more or less depends on the stove you used; so check them when it reaches almost 50 minutes. The top part of the cake gets nice golden color; only when the pan is pre-heated, the flame must be lowest and the lid of the pan is tight (only a narrow hole to escape the steam).
- Soften butter-100 gm
- Melted white chocolate-1/2 cup
- Whip cream-1 cup
- Desiccated coconut-2 tbsp
- Beat soften butter until creamy.
- Add melted white chocolate and mix well.
- Next Beat the whip cream (i used frozen thawed whip cream; no need to add sugar) until thick and fluffy.
- Fold it gently with the butter cream in three additions.
- Keep in fridge for 15 minutes.
- Thick coconut milk-1/2 cup (without any water content) or use coconut cream.
- Melted white chocolate-1/4 cup
- Raffaello candies
- White chocolate curls
- Desiccated coconut
- Sliced almonds
- After cools down the cake cut them in to two or three equal circles.
- Mix coconut milk with melted white chocolate.
- Add little frosting on the cake board and place a cake circle on top.
- Soak the first layer of cake with sweetened coconut milk .
- Apply a dollop of frosting on top and level it.
- Above the place the another two layers of cake by repeating the soaking and frosting.
- Cover the cake completely with cream and chill for 20 minutes.
- After that garnish on all the sides with desiccated coconut.
- Garnish on top of the cake with Raffaello candies, white chocolate curls and sliced almonds.
- Chill the cake for two hours to set.
- Cut them in to slices and enjoy!!
