Mushroom coconut milk soup is one of the perfect vegan treat for welcoming winter. This is ridiculously easy and tastes great. Try this healthy and hearty treat for your dinner tonight.
Ingredients:
- Olive oil-1 1/2 tbsp
- Thinly chopped garlic-1 tbsp
- Thinly chopped ginger-1 tbsp
- Thinly chopped onion-2 tbsp
- Thinly chopped carrot- 1/2 cup
- Chopped mushrooms-1 cup
- Pepper powder-1 tsp
- Salt-to taste
- Mixed herbs-1 tsp
- Coconut milk-2 1/2 cup
- joy.Fresh cream-2 tbsp
- Coriander leaves chopped-2 tbsp
- Heat oil in a pan; add garlic, ginger and onion.
- Saute for 2-3 minutes.
- Add chopped carrots and mushrooms.
- Add pepper powder, salt and mixed herbs.
- mix well and saute for 5 minutes until mushrooms get cooked and leaves moisture in it.
- After that add coconut milk and boil for about 5 minutes until slightly thickens.
- Add fresh cream and coriander leaves; mix well and turn off flame.
- Serve warm and enjoy!!!
