Chettinad Chicken Dry Roast

Chettinad chicken dry roast is a spicy and aromatic chicken preparation. It is a must try South Indian chicken dish. The blend of whole spices along with grated coconut forms a delicious chettinad masala. Try this starter for your dine and yes..Please don't forget to leave your feedback's here...
Ingredients:
  1. Chicken-1/2 kg

  2. Turmeric powder- 1/2 tsp

  3. Lemon juice-1 tbsp

  4. Salt-to taste

  5. Whole spices-few (cinnamon, cardamom, clove, bay leaf, pepper corns, cumin seeds, fennel seeds and star anise)

  6. Dry red chilly-3 or 4

  7. Grated coconut- 1/4 cup

  8. Oil-2 tbsp

  9. Onion sliced-2 medium

  10. Tomato sliced-1 large

  11. Ginger chopped-1 tsp

  12. Garlic chopped-1 tsp

  13. Green chilly split-1 or 2

  14. Curry leaves-2 springs

Preparation:
  • Marinate the cleaned chicken pieces with lemon juice, turmeric powder and salt.

  • Dry roast all the whole spices along with dry red chilly for a minute in low flame.

  • Add grated coconut and roast for another two minutes.

  • After cools down, transfer this mix in to a blender and blend coarse (without adding any water). Keep it aside.

  • Heat a pan with oil; add sliced onions and saute until soften.

  • Add ginger, garlic and green chilly; saute a minute.

  • Add tomato pieces and saute until mashed.

  • Add marinated chicken pieces along with the blended spice mix.

  • Mix well and cook covered for about 20 minutes on medium flame (or until the chicken pieces gets cooked). Stir often by opening the lid.Check for salt.

  • Open the lid and add curry leaves. Cook for another few minutes until the chicken pieces are well coated with the dry gravy.
