Cashew burfi is one of the Indian most famous sweet whichis served and gifted in most of all special occasions. It is very easy to make theperfect burfi’s at home within few times. Everyone loves the thin, melt inmouth cashew slices. It is my personal favorite sweet and i highly recommended it for all who read this😊😊😊.Ingredients:Cashew nuts-1cupSugar- ½ cupWater- ¼ cupGhee-1tbspcardamom powder-1/4 tspPreparation:Grind the cashews in to a fine powder using a dry blender.Heat sugar and water in a pan at very low flame.When the sugar completely dissolves in water, add cashew powder in to the pan.Stir well continuously on low flame.It starts thickening and stir well continuously until the cashews clearly leave from the sides of the pan (other wise it will be sticky).At this stage add saffron (crushed with hand / or cardamom powder) and ghee to the pan.Switch off the flame and transfer it in to a plate.When it is hot (enough hot to handle with your hands) knead the cashew mixture to smooth dough.Flatten the dough and place it on a greased tray or butter paper.Gently roll from all sides as a thin crepe of thickness 5 mm.Allow it to cool for sometime (approx. 20mints)Using a sharp knife cut the crepe in to diamond shapes.Remove (separates) it from the tray by using a knife.Serve and enjoy!!Store it in an air tight container for long use.Note: When you are powdering cashews in blender..do not blend for long time; then the powder may turns to watery and sticky; just blend for 1 or 2 minutes and sieve it get the fine powder. You can powder the remaining lumps for one more time and add it to the powdered cashew.
