Ingredients:
- Carrot-4 medium
- Eggs-5
- Sugar-3 tbsp
- Sweetened condensed milk-4 tbsp
- Milk powder-4 tbsp
- Cardamom powder-1/4 tsp
- Ghee-2 tsp
- Sliced pistachios (Or nuts)-to garnish
- In to a pressure cooker add chopped carrots along with 1/2 cup of water.
- Pressure cook on high flame for 3 whistles or until cooked.
- Open the lid after cools down; drain any excess water in it.
- In to a blender add this cooked carrots, sugar, condensed milk, cardamom powder, milk powder and eggs.
- Blend to smooth puree without any lumps.
- Heat a non-stick small wide pan with 2 tsps of ghee.
- Pour the blended batter in to it.
- Cover the lid and cook on very low flame for about 8 minutes.
- After that open it and garnish on top with sliced pistachios.
- Cover it again and cook on low flame for another 10-12 minutes.
- Open it; check with a fork whether it is cooked inside or not.
- Carefully add in to a serving plate after cools down.
- Cut them in to slices and enjoy.
