Amrutham podi Vettu cake


Amrutham podi (Nutri mix powder) is a health supplement provided in Kerala for kids and pregnant ladies to fulfill their nutritional status. The ingredients in Amrutham podi are wheat, ground nut, soya bean, gram dal and sugar/ jaggery. 



Normally; the powder is used to make a porridge and given to babies. Here is an easy tea time snack Vettucake recipe using Amrutham podi. Ingredients:



  1. Amrutham podi (nutri mix powder)- 11/2 cup

  2. Banana-1 (robest)

  3. Cardamom powder-1/4 tsp

  4. Baking soda-1/4 tsp

  5. Melted jaggery-1/2 cup 

  6. Rice powder-2 tbsp

  7. Semolina (rava)-2 tbsp

  8. Salt-1/4 tsp

  9. Oil-for deep frying


Preparation:



  • In a blender add chopped banana and puree it without adding any water.

  • In a mixing bowl add this banana puree, amrutham podi, cardamom powder, baking soda, salt, melted jaggery, rice powder and semolina.

  • Mix well and knead to a smooth dough (if the dough is too loose add some more amrutham podi; if it is too hard add little water to soften the dough).

  • Cover the dough and rest for 10 minutes.

  • After that take few portions from the; make small circles in between your greased hands; flatten it little and make a cross mark with knife on top.

  • Prepare all the vettucakes in this way.

  • Heat a pan with enough oil for deep frying. Once the oil is hot; make the flame to low.

  • Add the prepare vettucakes in hot oil without overcrowding.

  • Flip them only when it is nice golden on side (If you flip often they may broken).

  • Fry both sides until nice golden in color.

  • Drain in to paper towels and serve with a cup of tea.
