15 Bean Taco Soup
Growing up in Appalachia, I know my way around a pot of beans.
I’ve mentioned before that when I think about my grandpa (always just Papaw in my mind), the memories always include the smell of beans simmering on the stove.
Papaw didn’t think too far outside the box, but there are so many ways to get creative with beans!
For this yummy 15 Bean Taco Soup I used Hurst’s® HamBeens® 15 Bean Soup® to create this easy 15 bean taco soup recipe.
The 15 Bean Soup mix is one of many delicious Hurst’s varieties, in the dry beans section of your local grocery store. I get mine at Kroger!
This 15 Bean Taco Soup has great flavor. It’s not too spicy, and pairs perfectly with a variety of toppings.
We enjoy ours with avocado slices, fresh cilantro, and cheese.
Sour cream and tortilla chips would also be an amazing addition to your bowl.
15 Bean Soup with Ground Beef
While you may be accustomed to cooking your 15 Bean Soup with ham, you’re going to love ground beef, too.
If you want to lighten this soup up a little, you could also make it with ground turkey or leftover holiday turkey.

Ingredients
- 1 Package Hurst’s 15 Bean Soup
- 1 lb. ground beef, I used 90/10
- 1 large yellow onion, diced
- 2 10 oz. Cans Ro-tel, original
- 1 15 oz. tomato sauce
- 1 15.25 oz. can corn, with liquid
- 2 tablespoons taco seasoning
Instructions
- Sort and rinse beans, set aside.
- In a 6 quart-dutch oven, brown the beef and onions. Drain any excess grease.
- Add beans and cover with 8 cups water, then bring to a boil. Reduce heat and simmer for 1 hour 30 minutes.
- Add the remaining ingredients and stir. Bring back to a boil then reduce heat and simmer for an additional 30 to 45 minutes or until beans are tender.
- Garnish with avocado, cilantro, and shredded cheddar cheese.
